  • Fumaric acid is known as a trans-butenedioic acid and is an unsaturated dicarboxylic acid. 
  • It is a naturally occurring organic acid in the vegetable kingdom and is non-toxic. 
  • It is essential for animal and plant tissue respiration and forms an integral part of the Krebs cycle.

Fumaric acid Cold Water Soluble is the acid of choice in PSD as it provides more sourness per unit weight and it is non hygroscopic.  Packaging material costs are less due to lower moisture barrier requirements and use of smaller packs.

Fumaric acid lowers the pH of the dough improving mould inhibition and extending shelf life.  Fumaric acid replaces other leavening acids saving costs.

Fumaric acid acts as a flavouring agent for rye and sour dough breads and is added during the dry blending step.

Fumaric acid cuts food acid costs as it can replace Citric, Malic, or Tartaric acid in the ratio of 2:3.

Fumaric acid extends the shelf life of candies coated with acid because it is not hygroscopic as well as reducing cost because it provides more sourness per unit weight than other acidulants.
